A new twist on a traditional food. Huzzah for fusion!

  • 4 corn tortillas, fresh *
  • 1 can(s) black beans
  • 1/2+ cup(s) sour cream, light
  • 1 pkg. sprouts
  • 1 Tbsp. capers
  • 1 avocado
  • 4 Tbsp. chopped kalamata olives, deli
  • 3 Tbsp. sun-dried tomatoes **
  • olive oil


* or tostada shells
** Packed in olive oil


If using fresh corn tortillas, bake or fry them to create crispy tostada. Spread sour cream on tostada, then a few spoonfuls of heated black beans. Place sprouts atop the beans and add the sun dried tomatoes, capers, and olives. Slice avocado and layer on top, then drizzle with olive oil. Finally, add a dollop of sour cream. Yum!

We tried this recipe for a dinner and I must say, I honestly haven't had anything quite like it. Very unique, delicious flavors! We will be making them again soon. And, YES - thanks for sharing.
